Salting the cabbage is the first button of kimchi's flavor. Even a slight deviation in salt concentration or salting time changes the crisp texture and seasoning. Taesung Kimchi adjusts the salting conditions to the moisture and thickness of the cabbage in each season, keeping the same crispness all year round.
